To me cathedral town has a distinct emotive nuance: a middle-class, conservative, pleasant, quiet town with some history behind it that is set somewhere where nothing much "exciting" happens. It would be unlikely, but not impossible, for the "cathedral town" to be in an industrial heartland.
A cathedral is a church that is the official seat of a diocesan bishop. It's called this way because a "cátedra" is the place from which a bishop presides/chairs the mass inside a cathedral. A "parroquia" (parish) is just a little church in a neighborhood/district. There are more kinds of churches; abadías, basílicas, etc.

Dec 30, 2004 · Close is a name for a road (instead of street, avenue etc) with no way out at the end. In English we say they are cul-de-sacs, using the French!! But it is also used for the area around a cathedral, a 'cathedral close', where there is often a lawn and nice old houses - I think it is an 'enclosed' area around the cathedral.

I am not sure about the second part of the sentence and I do not really know which version sounds best to you. Also I have some doubts about "beginning" and "starting".

And 'until' sounds a little unnatural. 'To' sounds more natural, as does 'till'. 'from 9 to 11', 'from 2 till 6', 'from 8 till late' and so on. E.
