Mar 5, 2018 · If you are lucky enough to live in the Aloha State, I’m betting you’ve had edamame rice (aka happy rice) many times. Here in Hilo, it is on a heavy rotation at the potlucks I attend. Why? I’m guessing it’s because it’s very, very easy to make. If you can cook a pot of rice, you can make this!

It's fairly simple to make and has only 4 ingredients in it: rice, edamame, ajitsuke nametake (cooked seasoned enoki mushrooms), and wakame chazuke (dry seaweed and rice ball) rice seasoning. One recipe calls for a lot of rice, which makes it a perfect side dish to bring to a party.
